Matcha is a finely ground powder of specially grown and processed green tea leaves. It is traditionally consumed in East Asia. The tea leaves used to make matcha are grown under shade for 3-4 weeks before harvesting. While growing under shade, the tea plant (Camellia sinensis) produces more caffeine and theanine. Matcha powder is consumed differently than tea leaves or tea bags because it is dissolved in a liquid, most often water or milk.
Matcha originated in China (Tang Dynasty) and was brought to Japan in 1191. Thus, matcha production began to become intertwined with the history of the Japanese tea ceremony and Zen Buddhism for the next 400 years. The traditional tea growing center for matcha is the region around Kyoto.
The traditional Japanese tea ceremony focuses on the preparation, serving and drinking of matcha as hot tea and embodies spirituality. Nowadays, matcha is also used to flavor various foods and drinks such as mochi, soba, ice cream, lattes and wagashi. Generally, higher quality matcha is used for ceremonies, although there are no standard requirements. Tea plants are grown for 40 years before the leaves are harvested.
