Organic coconut milk is a creamy plant-based food made from the finely ground flesh of mature coconuts and water. Coconut milk is not coconut water. Coconut water is the natural liquid found inside a coconut, while coconut milk is made by grinding and extracting the fleshy inner part of mature coconuts with water.
According to the international Codex standard for coconut products, coconut milk is a diluted emulsion of finely comminuted coconut flesh and water, in which soluble and suspended components are evenly distributed.
Thanks to its naturally occurring coconut fats, coconut milk has a rich and creamy texture and a characteristic exotic flavour. At lower temperatures, coconut fat solidifies naturally, which may cause the product to become thicker or separate into different layers or phases.
