Cinnamon, and more precisely cinnamon bark, is considered one of the oldest spices in the world. Under the name "kwai" it was noted in the medicinal book of the Chinese emperor Shen-nung as early as 2500 BC.

The ancient Egyptians and Romans used it as a spice and medicine.

The bark is obtained from the branches of tropical trees or bushes of the Cinnamon genus of the Laurel family. Over 300 types of cinnamon are known. Ceylon cinnamon is mostly used for medicinal purposes. The dried peels are like semi-tubes, have a brown color, a delicate smell and a sweetish slightly spicy taste. They contain 1-2 percent essential oil, mucus, starch, mannitol, polyphenols, etc.

Cinnamon essential oil is reddish-brown, with a strong, pleasant aroma. It consists mainly of cinnamic aldehyde (70-90 percent) and 5 percent eugenol.

Another type of cinnamon bark is Chinese. It is extracted from the up to 11 meter tall Chinese cinnamon tree. It is found in Southeast China and Burma. The essential oil also contains a high estimate of cinnamic aldehyde, mucilaginous substances, polyphenols, sugars, etc.

Do not deprive yourself of the useful cinnamon, which can be put in sweets, compotes, jams. In Bulgaria, it is mainly added to milk with rice, rice dishes: 1 teaspoon for 4 servings.

Mulled wine/punch is flavored with cinnamon and other spices. Cinnamon combines well with cloves, nutmeg, star anise and common anise.

In phytotherapy, cinnamon bark is used primarily for stomach disorders and also as an appetite stimulant (1/2 teaspoon of powder is taken 3 times a day before meals).

Cinnamon barks also have antimicrobial and antiparasitic effects.

Cold extract of cinnamon bark (1:5), soaked for 6 hours, applied to compresses for lichen on the skin.
