The cocoa tree (Theobroma cacao) is an evergreen tropical plant known to mankind for millennia. It originates from Central and South America and grows in the areas around the Equator. Criollo is an ancient, non-hybrid variety with a rich, balanced and dense taste. A very small part of the world production of cocoa beans is of this variety, because of their more difficult cultivation and relatively lower yield. Criollo is the highest quality and sought after of all cocoa varieties.
Cocoa powder comes from cocoa beans. Does this mean we can grind the cocoa beans or crush them to make cocoa powder? The answer is no.
It is actually made after extracting the cocoa butter from the cocoa beans, drying the residue and grinding it into a fine powder. Cocoa powder is dark brown in color. When raw, it has a slightly bitter taste, but adds a distinctive chocolate flavor when added to desserts, cakes and biscuits.

Usage:
