Jelly, also called gelatin dessert, is a dessert made with a sweetened and flavored processed collagen product (gelatin). This type of dessert was first recorded as jelly by Hannah Glass in her book, The Art of Cooking in the 18th Century. Jelly is also featured in best-selling cookbooks by English food writers Eliza Acton and Isabella Beton in the 19th century.
The jellies can be made by combining plain gelatin with other ingredients or by using a pre-mixed mixture of gelatin with additives.
Fully prepared gelatin desserts are sold in a variety of forms, ranging from large decorative forms to individual serving cups.
Berry Jelly Mix "Zdravnitza"
Berry Jelly Mix is an original and innovative recipe containing gelatin, soluble GoFos fiber, and lyophilized fruits. The product does not contain added sugar, but is sweetened with xylitol and stevia. The amount of 1 package of fruit jelly mix is enough to gel not less than 500 ml liquid.
Gelatin
Gelatine is a simple protein obtainable by the hydrolysis of collagen from animal bones or cartilage, boiled in water. It is easily soluble in water, resulting solutions tend to compress into jelly. The dissolution rate is proportional to water temperature. Optimal temperature for dissolving the gelatin is from 42 to 60° C.
Although the gelatin in a dry weight is a 98-99% protein, it has a lower nutritional value than many other protein sources. Instructions for use:
1. Add the contents of the package to 100 ml of warm water and stir periodically for 10 minutes until the mixture is homogenous and swells.
2. Add another 400 ml of water and stir again for about 10 minutes.
3. Distribute the mixture in suitable containers and refrigerate until firm.
Due to the fruit content, it is possible for the seeds to settle in the finished product. To avoid settling, stir periodically during storage in the fridge.
