Samardala (Nectaroscordum bulgaricum) is an annual herbaceous plant from the onion family. In Bulgaria, it grows wild primarily in Southeastern regions, such as Stara Zagora, Sliven, and Strandzha. A distinctive feature of samardala is that it loses its aroma when dried. To preserve its unique scent, the plant is ground into a paste, which is then mixed with salt. Once the salt dries, it forms clumps that are sifted into fine granules.
In the past, homemade preparation of this spice was a common household practice. Today, samardala is produced commercially and widely available throughout the country.
Samardala is most famously used to season boiled eggs, potatoes, and lamb dishes. It’s also a great addition to green salads and dishes made with spinach, dock, or nettle. The spice is typically sprinkled over finished meals, as heat diminishes its aroma.
Since samardala contains a high amount of salt, it’s essential to reduce the overall salt content in your recipe when using this spice.
