Buckwheat is a genus of angiosperms from the Polygonaceae family. Some species are used as food grains, although they are not part of the Cereal family.
For the first time, people began to grow it 6000 years ago in Southeast Asia. In India, buckwheat is called "black rice" and in other countries it is known as "black wheat". After the start of its mass cultivation, it quickly gained the fame of one of the most common foods for the poorer social strata.
The homeland of buckwheat is India, but it is most popular in Russia (they call it "grechka").
Buckwheat is lower in carbohydrates than a number of cereals, potatoes and rice. This makes it an excellent food for diabetics, overweight people and special diets.
In combination with milk, buckwheat significantly improves the work of the gastrointestinal tract and boosts metabolism without burdening the digestive system, because it contains pectin.
