A natural product obtained by grinding a local variety of wild wheat in a stone mill. There are no additives and enhancers added to it.
Wild wheat is also known as two-grained einkorn or dinkel. It is adapted to local conditions and does not require spraying and fertilizing. It does not extract the harmful substances from the soil. It is resistant to radiation and does not lend itself to gene modification.
At the expense of lower gluten content, special einkorn flour contains more good proteins, fats, minerals and vitamins - especially A and those from the B complex. It blends well and is the basis for extremely useful pasta.
