Traditional Bulgarian Noodles - A Taste of Bulgarian Tradition:

Traditional Bulgarian noodles, known as "юфка" (yufka) in Bulgarian, are one of those traditional foods associated with home cooking and the taste of food prepared by previous generations. In Bulgarian households, homemade noodles were traditionally made from dough that was rolled into thin sheets, dried and then broken into pieces. Prepared in this way, they could be stored and used later for various dishes.

Unlike the long, thin noodles commonly associated with Asian cuisine, traditional Bulgarian "юфка" consists of thin sheets of dough that are dried and then broken into pieces. This traditional form is the reason why the English term "noodles" is used for the product, even though its appearance differs from long noodle varieties.

The preparation of homemade noodles was part of the seasonal rhythm of the traditional Bulgarian household. Large, thin sheets of dough were rolled out and left to dry, after which they were broken into pieces and stored for use during the following months. Empty the contents of the package into 1 litre of boiling water and cook for 5 minutes, stirring occasionally. After cooking, drain the noodles and garnish as desired.

Ingredients:

  • 200 g rye traditional Bulgarian noodles;
  • 50-60 g butter;
  • 150-200 g white cheese;
  • salt to taste;
  • optional - fresh milk or yoghurt.

Preparation:

Cook the noodles according to the instructions on the package and drain them well. While they are still warm, add the butter and crumbled cheese. Stir gently until the butter melts and coats the noodles. If desired, serve with fresh milk or yoghurt.

Recipe 2: Rye Noodles with Vegetables and Cheese

A tasty and easy idea for a wholesome homemade meal that can be prepared with your favourite seasonal vegetables.

Ingredients:

  • 200 g rye traditional Bulgarian noodles;
  • 1 small onion;
  • 1 carrot;
  • 1 red pepper;
  • 150 g mushrooms;
  • 2 tbsp olive oil or cooking oil;
  • 100-150 g white cheese;
  • salt and spices to taste;
  • optional - fresh parsley.

Preparation:

Cook the noodles for 5 minutes in 1 litre of boiling water and drain them. Chop the vegetables and sauté them in the olive oil or cooking oil until softened. Add the mushrooms and cook for a few more minutes. Add the cooked noodles, season with salt and your preferred spices, and stir well. Serve with crumbled cheese and, if desired, sprinkle with fresh parsley.

Store in a dry place protected from direct sunlight and heat, at an air temperature of up to 20 °C and relative humidity of up to 75%.
