Literally, garam masala means warm spice, but not because it is very spicy, but because it has a warm aroma and warming effect.
Garam masala is a suitable seasoning for lentils, beans, and peas, for grain-based dishes - quinoa, millet, chickpeas, buckwheat; for dishes with spinach, watercress, potatoes, etc.
Garam masala is added at the end of cooking because prolonged heat treatment loses the complex flavor that the spice has to offer.
