Palm sugar is a natural sweetener extracted from the flowers of the sugar palm. Palm sugar is a well-known product in countries such as Sri Lanka, Malaysia, Vietnam and Indonesia.
The flowers of the sugar palm are boiled until thickened, so that a thick syrup is obtained. It is then cooled until sugar crystals are formed.
Palm sugar has a caramel color and a taste comparable to that of white sugar.
Palm sugar has a low glycemic index and is suitable for diabetics.
