Mung bean (Vigna radiata) is a thermophilic, annual legume belonging to the family Legumes (Fabaceae, Leguminosae). Mung bean is common in the West Indies, Southeast and East Asia, Africa, where it has long been known as the nourishment of the locals. It can also be found in southern Europe, the Americas. It rises from sea level to 1850 meters above sea level in the Himalayas.

The sprouts are then ready for consumption. Store ready-made sprouts in the refrigerator.
