Baking powder is a leavening agent, without yeast content, which is used for various baked goods such as pies, scones, cake, muffins or biscuits. Baking powder is a white powder that increases the volume of dough by releasing carbon dioxide as a result of a reaction between a basic salt and an acid salt. Unlike yeast, which involves the fermentation of living microorganisms, baking powder works only through chemical reactions.
Baking powder has the ability to increase the volume of the dough we prepare. This is as a result of the interaction between the soda, which is a basic/alkaline medium, and the citric acid, which after a joint reaction release carbon dioxide.
