Caraway (Carum carvi) is a perennial plant of the Apiaceae family. It grows wild in Europe, Asia, and North Africa, and in Bulgaria, it is widespread in the meadows of the Central and Western Balkan Mountains, Rila, the Rhodope Mountains, etc. When cultivated, it is grown as a biennial plant.
The usable part is the fruit, which has a strong aniseed aroma and flavor. It is harvested before it is fully ripe – when it has turned from waxy to fully ripe and has begun to turn brown. It is usually used whole, without being ground.
In cooking, caraway is mostly used as a spice for savory pastries, and to flavor cheeses and dairy pates.
The fruits and essential oils of caraway stimulate gastric secretion and aid digestion, so they are also suitable for dishes made from hard-to-digest foods and fatty foods - cabbage, beets, and fatty meats. Caraway is also used in sausages and canned meat, as it has an antimicrobial effect. It is also used for the preparation of aromatic drinks - liqueurs and rakia.
